The thermostat senses the room, not just the cabinet

Many freezers sense the temperature around the unit as well as inside it. In a cold garage or outbuilding in winter, the appliance can decide it doesn't need to run — and while the compressor stays off, the interior drifts up toward the ambient temperature, which in a garage may still be well above freezing.
